On the nose its clean with notes of chocolate and vanilla followed by fresh red fruit. The palate is smooth long with silky tannins.
Aging:
6 months in barrique (225L) second and third passage, followed by time in the bottle.
Winemaking:
About 4 days of cold maceration 0 – 4C and 18 days of fermentation with selected autochthonous yeast.
Food Pairing : Traditional Tuscan food, fresh cheeses, grilled chicken and pizza.
