Soil: Though the southernmost sub AVA within Napa Valley, Carneros also features some of the coolest temperatures in the valley as a result of its proximity to the San Pablo Bay and the fog cover that arrives nearly every morning, burning off slowly through the day. This climate and the clay dominated soils that prevent deep rooting result in lower yields with more concentrated characteristics.
Our 2016 Chardonnay demonstrates a brilliant, youthful color supported by aromas of honeysuckle and peach. Its medium body reveals hints of minerality and complexity from nine months of sur lies aging.
Aging: Whole cluster pressed. Fermented and aged in stainless steel as well as neutral French oak barrels. Aged on the lees for nine months with minimal racking and minimal stirring.
Food Pairing : Meaty fish (halibut, cod) and shellfish (lobster, shrimp, crab, scallops.) subtly flavored, simply seasoned poultry and pork dishes
