Deep brick red with a slight purple hue to the wine’s color. Beguiling blackberry and blueberry dominate the aromas with more complex cranberry, cinnamon, current and pipe tobacco coming through as the aromas unfold. With noteworthy tannins and an earthy mouthfeel, the wine has a lingering, long and pleasant finish
Vinification: Six day cold maceration followed by 10 days of fermentation. Daily pumpers during active fermentation at 88 degrees F. 33 days total vat time followed by malolactic fermentation in barrel.
Aging: Aged for 18 months in 100% French oak barrels, 60% new.
Food Pairing : Roasted Duck Breast with Pecan Purée. Cabernet-Braised Venison Cheeks. Beef Tagliata, Arugula and Trevisana Salad.
